Eadible, however its predators are few. First, because the only way to get to the good stuff is from underneath. Second, because turning it over is very difficult.
If it has a chance to cling or dig into something solid. Third, if a predator did get it turned over; the skitters clench over its belly, and or onto the snout of an attacker, like a steel trap.
